In honor of National Sandwich Day, I want to take a moment to introduce any uninitiated to the bánh mì.

Do you like pork? How about THREE KINDS in one sandwich? That's how they serve it up in my favorite neighborhood bánh mì shop: with roasted ground pork, ham and pâté. Yeah.

I am so over bacon. And I never understood why so many panties were getting all twisted over it in the first place. It's desiccated strips of flesh, people! Greasy, smoky, overly salted flesh. There are a thousand tastier things you can do with pork (bacon vodka is definitely not one of them), but none are tastier than the bánh mì. Behold, its majesty!

This mighty sandwich hails from Vietnam and traditionally stuffs a crusty baguette full of pickled veggies (carrots and daikon made to taste like candy), cilantro, cucumber, mayo and meat -- like, A LOT of meat.



Throw some Sriracha (a chili sauce) on that bad boy and you've got yourself one perfect bite: crunchy, chewy, salty, spicy, savory and sweet. Tom Colicchio might call that "balance." I call it MAGIC.
